Summer Couscous Salad

This is the perfect salad for summer as it's fresh and simple to make. Not only is couscous high in fibre, but it will also keep you full for longer. Our whole family enjoy's this salad for lunch.



Makes: 1 big bowl of salad

Ingredients:

1/2 cup whole-grain couscous

1 1/2 cups boiling water

1 teaspoon lemon juice

1 teaspoon pepper

1 teaspoon salt

1 teaspoon minced green chilli

1 cup sprouts

1/3 cup grated carrot

1 cup roughly chopped coriander

1/4 cup diced onion

1/2 cup orange pieces

1/2 cup pomegranate seeds

1 tablespoon dried apricot pieces

1 tablespoon slivered pistachios

1 tablespoon sunflower seeds

1 tablespoon slivered almonds

Instructions:

1) First add the couscous to a heat-safe bowl and pour the boiling water in it. Cover the bowl with a lid and let it cook for 10 minutes.

2) In a small bowl add the lemon juice, pepper, salt and minced green chilli. Whisk it up to make the dressing.

3) In a large salad bowl add the sprouts, grated carrot, roughly chopped coriander, diced onion, orange pieces, pomegranate seeds, dried apricot pieces, slivered pistachios, sunflower seeds and slivered almonds. Toss this up.

4) Add the cooked couscous and dressing to the salad. Toss one more time so all the ingredients are well combined.
