This is one of my favourite salads because of all the fun textures you get from the Khandvi (Gujarati snack) and kale.
Makes: 1 big bowl of salad
1 tablespoon honey
1 tablespoon olive oil
1 1/4 teaspoon salt
1 teaspoon pepper
2 teaspoons apple cider vinegar/ lemon juice
4 minced garlic cloves
3 cups kale
1 cup sliced onions
1 cup carrots cut into matchsticks
1/4 cup dried cranberries
20 pieces of Khandvi (Gujarati snack)
1/4 cup coconut flakes
I also made a video to make this recipe easier to understand:
1) Add the honey, olive oil, salt, pepper, apple cider vinegar/ lemon juice, and minced garlic in a small bowl to make the dressing. Stir it till combined.
2) In a big salad bowl add the kale, onions, carrots, dried cranberries and coconut flakes (if you are using them). Toss all of this together.
3) Drizzle on the dressing and toss it together again until everything is well coated in the dressing.
4) To decorate gently place your Khandvi on top of the salad.
