This cake is bursting with a bright orange flavour and is fluffy as a cloud. It's also super easy to make and doesn't require any fancy equipment.
Makes: 1 loaf cake
Ingredients:
For the cake:
1/2 cup sugar
1/2 cup yoghurt/curd
2 teaspoons orange zest
1/4 cup melted unsalted butter
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup orange juice
Optional:1-2 drops orange food colouring
For the glaze:
1 cup powdered sugar
3 tablespoons orange juice
Optional:1-2 drops orange food colouring
For the decoration:
Blood oranges/regular oranges sliced
Optional-Edible wafer paper flowers

Instructions:
1) Preheat the oven to 180°C (350°F)
2) In a bowl add the sugar, yoghurt/curd and orange zest. Mix till well combined.
3) Add in the melted unsalted butter and mix that in.
4) Sift in the whole wheat flour, baking powder and baking soda. Mix till roughly combined.
5) Add the orange juice and food colouring (optional), mix it till it's just combined. Make sure not to over-mix it.
6) Grease a loaf pan with vegetable oil and then line with a piece of parchment paper before greasing the top of the parchment paper with some more oil so it doesn't stick.
7) Pour the batter in and bake for 20 minutes till a toothpick inserted in the centre of the cake comes out clean. Let it cool completely.
8) To make the icing combine the powdered sugar with the orange juice and food colouring (optional). Pour this over the cooled cake.
9) Decorate with blood orange/orange slices and edible wafer paper flowers (optional)
