The best oatmeal cookies!
Cookies are a classic winter dessert and always turn out to be delicious. Today we are going back to the basics by making some incredible oatmeal cookies. I spent the past two days perfecting this recipe and recipe testing it, to share with you.
Oatmeal cookies are crunchy but still nice and chewy and we get this epic texture by not only using butter but by also using oil.These cookies also have a hint of vanilla and cinnamon which really enhance the flavour of the cookie.
The toppings for these cookies are completely customisable! You can make a classic oatmeal raisin cookie by adding in raisins or you can add in almonds and cranberries. I added in chocolate chips and drizzled some of my cookies with a luscious chocolate ganache! You can even dip your cookies in a powdered sugar glaze for a more elegant and classic feel. These cookies are sure to be your family's favourite once you explore the various flavour combinations you can make with this basic recipe!

Ingredients- |Yield-Makes 24 medium sized cookies|
-1/2 cup vegetable oil
-5 tablespoons unsalted butter-melted
-1/2 cup castor/granulated sugar
-3/4 cup dark brown sugar/ jaggery sugar
- 1 large egg
-1 teaspoon vanilla extract
-4 tablespoons of whole milk
-1/2 teaspoon cinnamon
-1 cup all purpose flour/ maida
-1/2 teaspoon baking soda
-A pinch of salt
-3 cups old fashioned rolled oats
-1/2 cup of a topping of your choice(raisins, nuts, cranberries, chocolate chips etc...)
1)Pre-heat your oven to 190 degrees Celsius or 375 degrees Fahrenheit and grease and line a baking tray with butter and parchment paper.
2)Add your butter, oil, brown sugar and castor sugar in a large bowl and whisk until combined.
3)Next crack an egg in a separate bowl and add the vanilla and milk into it and stir until combined.
4)Add the egg mixture into the butter and sugar mixture and mix until combined
5)In a medium sized bowl combine the flour, cinnamon, baking soda, salt and the topping of your choice. Whisk together.
6)Add your flour mixture into the butter mixture and fold together midway when the flour is mixed in add in your oats and continue folding.
7)Using a using a medium sized ice cream scoop or just a spoon and scoop the cookie dough roughly 1 inch apart in the baking tray(I could fit about 9 in my 9x14 tray).
8)Nest using your hands smoosh the dough balls into flat cookies (you have to do this as your cookies wont spread).
9)Bake your cookies for 9 minutes and after baked let them cool on a wire rack and only handle them when completely cool.

1)The oil really gives it the dreamy texture you want in an oatmeal cookie!
2)Cooking these cookies at 190 degrees Celsius or 375 degrees Fahrenheit gives it the crisp exterior and the soft interior!
Tips and tricks!-
-You can use the butter paper which the butter was wrapped in to grease you baking tray.
-For a more even consistency you can pulse your oats in a food processor until course but NOT like a powder.
-Make sure you use old fashioned oats for this recipe and no other type as it wont work otherwise.
