Summer treats!

Before I write more on this post I want to share a little poem on summer that I wrote-

Summer is on the way

Time for the happy golden days

Nothing should get in your way

On happy summer days

As we enjoy the treats nice and cool

We take a dip in the chilly pool

Fun and sun is here

Fun is near

Time for SUMMER

Now lets move on to the treats, summer reminds me of cool and yummy treats and I want to share some simple recipes you want to try at home.

Pinkadoodle punch- This drink is simple to make and it is perfect for warm summer days!



2 cups coconut water ( freshest work the best)

1 cup cranberry juice

3 tablespoon sugar/ 3 tablespoon honey

1/2 teaspoon salt


3 tablespoon water

1/4 cup colourful sugar- white sugar also works


Mix all the ingredients for the punch in a large jug

Take glasses and dip the rim or the glass in water and then dip it in colourful sugar(chill it in the fridge if you want it cold)

TA- DA your Pinkadoodle punch is ready!

Waffle and pancake ice cream sandwich-This is like a classic ice cream sandwich but instead of two cookies you have 2 waffle or pancake pieces. It is super easy to make and the batter works for both pancakes and waffles! If you want to make a classic cookie sandwich my chocolate chip cookie bars work really well).Fill it with any ice cream of your choice! You can make some for your friends and family as well


Pancake and waffle batter ingredients-

  • 2 eggs

  • 2 cups all-purpose flour

  • 1 3/4 cups milk

  • 1/2 cup vegetable oil

  • 1 tablespoon white sugar

  • 4 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/2 teaspoon vanilla extract

  • Optional toppings- chocolate chips and rainbow sprinkles



  1. Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.

  2. Grease the waffle iron with melted butter. Pour 1/4 cup of the mix onto hot waffle iron. Cook until golden brown. Chill in the fridge.

  3. Optional- pour in the optional toppings of you choice.


  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the centre and pour in the milk, egg and melted butter; mix until smooth.

  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and chill n the fridge

  3. Optional- pour in the optional toppings of you choice.


1. 10 minutes before you assemble take the ice cream out of the fridge( any flavour of your choice)

2.Take the pancakes/ waffles out of the fridge and scoop one dollop of ice cream( using a ice cream scooper works best)on one pancake/ waffle and take the other one and put it on the top and give it a small press.

3.If you want roll the sides of the sandwich in sprinkles or chocolate chips

4.Enjoy cold!

You can be as creative as you like with these sandwiches!Try out different topping or flavour combinations.
