Cake mix cookie cakes

On this post I want to share a super simple recipe which you can make at home during this time. Cookie cakes are like cookies but have a cake texture. On this post I have given a recipe for cookie cakes which uses cake mix, if you don't have cake mix then use your favourite cake's recipe's dry ingredients.Before I write this recipe I want to share a poem I wrote on cookie cakes-

With a crunch and a munch

But that chew which is just for you

It's light but crunchy

It's yummy and you will bake happily

More on cookie cakes- I came to know about cookie cakes a couple years ago and I loved the crispy exterior and a cakey interior. I loved to have these in the evening as a quick snack but you can add some ice cream between them to make an ice cream sandwich or serve it with hot chocolate fudge sauce, vanilla ice cream and fresh berries to make an incredible dessert.

On this post instead of a lot of photos and text I made a video! I will be making more videos for my blog soon!

For the cookie cake-

1/4 cup oil

2 eggs

1/4 cup milk

3 1/2 cups vanilla cake mix ( I used Betty Crocker's)

1 tablespoon sprinkles - you can add as much as you want!

1 tablespoon chocolate chips- you can add as much as you want again !

For the pumpkin spice hot chocolate-

1/2 teaspoon pumpkin spice ( you can use a blend of ground cloves, ginger and cinnamon)

1 1/2 tablespoons chocolate chips

1 cup hot milk


  1. Preheat the oven to 180 degrees C or 350 degrees F also line a baking sheet with parchment paper( later you can use the batter to stick it on to the plan)

  2. In a large bowl mix the cake mix, eggs, milk and oil and whisk till all the clumps are gone ( don't over mix)

  3. Divide the batter in two bowls and add sprinkles in one and chocolate chips in the other.

  4. Using an ice cream scoop make dollops on your baking sheet lined with parchment paper. Scoop each dollop one inch away from each other as they will spread when baking.

  5. Bake for 8-12 minutes until golden brown and transfer to a cooling rack.

  6. To make the pumpkin spice hot chocolate pour hot milk in a mug and add the chocolate chips and pumpkin spice and whisk till all the chocolate is melted

  7. Serve the cookie cakes with the hot chocolate
